Durango Casino & Resort Shakes Up “Eat Your Heart Out” Food Hall Lineup; Closes Three Tenants Ahead of North Expansion

LAS VEGAS, NV — Nearly three years after opening its doors to southwest valley locals and regional visitors, Station Casinos’ flagship Durango Casino & Resort is executing a major culinary shake-up inside its signature communal dining space, confirming the departure of three food hall tenants alongside a resort lobby outpost.

The transition—reported by the Las Vegas Review-Journal—reshapes the 25,000-square-foot Eat Your Heart Out food hall.

Los Angeles-born sandwich staple Uncle Paulie’s Deli closed operations, while local favorites Yu-Or-Mi Sushi and local coffee roaster Vesta Coffee Roasters (closing both its food hall kiosk and hotel lobby location) are scheduled to wind down service by November 10, 2026.

The tenant rotation marks the property’s first major food-and-beverage realignment since its December 2023 debut, arriving as general contractors advance construction on Durango’s multi-million-dollar North Expansion.

Reallocating Square Footage in a Shifting Off-Strip Market

When Durango debuted in late 2023, Station Casinos positioned Eat Your Heart Out as an upscale departure from traditional casino food courts, curating a blend of high-profile coastal imports and celebrated Las Vegas neighborhood concepts.

However, shifting foot-traffic patterns and consumer price sensitivity have prompted resort leadership to evaluate square-footage yields.

Uncle Paulie’s, which occupied a prominent stall near the central seating atrium, shuttered its counter service.

Resort management announced the space will host a rotating roster of culinary pop-up concepts to test customer appetite before locking in a permanent successor.

Meanwhile, Yu-Or-Mi Sushi—which operates its flagship brick-and-mortar location in the downtown Las Vegas Arts District—and Vesta Coffee Roasters will conclude operations at Durango on November 10.

Station Casinos confirmed that the closures affect only the brands’ Durango outlets and do not impact their independent standalone locations throughout Clark County.

The rest of the food hall roster—including New York’s Prince Street Pizza, Los Angeles benchmark Irv’s Burgers, Shang Artisan Noodle, Hawaiian street-food purveyor Ai Pono Café, Nielsen’s Frozen Custard, Station Casinos’ signature Oyster Bar, and the recently launched Villa’s Tacos—remains fully operational.

Aligning with the North Expansion Master Plan

The food hall turnover coincides with accelerating work on Durango’s third construction phase, the North Expansion.

The expansion project adds roughly 400 slot machines to the casino floor, a 36-lane bowling facility, luxury cinemas, and a two-story, 29,000-square-foot location of San Diego country-themed nightlife venue Moonshine Flats.

The north wing development also incorporates square footage for additional casual food outlets and full-service dining.

Hospitality analysts note that refreshing the original food hall ahead of the holiday season enables Station Casinos to recalibrate pricing, bring in concepts that cater directly to southwest valley residential demographics, and eliminate redundancies before the expanded dining wing debuts in 2027.

Station Casinos has not yet formally revealed the permanent concepts that will replace Uncle Paulie’s, Yu-Or-Mi, or Vesta, but indicated that announcements regarding incoming operators will be finalized over the coming weeks.
